Greek Tortellini Salad
This tortellini salad recipe is one of my favourite pasta salad recipes. It is infused with delicious Greek flavours like feta cheese, tomatoes and red onions.
Ingredients: | 1 lb (500 g) | cheese-filled tortellini | | 1 1/2 C (375 ml) | English cucumber (peeled & diced) | | 10-12 | cherry tomatoes (halved) | | 3/4 C (175 ml) | bottled roasted red peppers (chopped) | | 3/4 C (175 ml) | feta cheese (crumbled) | | 3/4 C (175 ml) | ripe olives | | 1/2 C (125 ml) | green onions (chopped) | | 1/3 C (75 ml) | red onions (chopped) | | 2 tsp. (10 ml) | oregano | | 1/4 tsp. (1 ml) | fresh ground pepper |
Dressing: | 1/3 C (75 ml) | Italian dressing | | 1 Tbsp. (15 ml) | balsamic vinegar | | 1 Tbsp. (15 ml) | lemon juice | | 1 tsp. (5 ml) | liquid honey | | 1 tsp. (5 ml) | Dijon mustard |
Dressing: In a small bowl, whisk together the Italian dressing, balsamic vinegar, lemon juice, honey and Dijon mustard. In a large pot of boiling water, cook the tortellini for 8-12 minutes. Drain and rinse under cold water. Drain well and place into a large bowl. Add diced cucumber, tomatoes, red peppers, feta cheese, onions, oregano and pepper. Mix well. Add the dressing and mix again. Cover and refrigerate until picnic time. Return to Healthy Salad recipes
