Sweet and Sour Coleslaw

This sweet and sour coleslaw recipe makes a great companion to any of the picnic sandwiches listed in this site.

4 cups green cabbage (shredded)
2 cups red cabbage (shredded)
1 carrot (peeled and shredded)
3/4 cup light/non-fat mayonnaise
1/2 cup light/non-fat sour cream
1 1/2 tbsp. sugar
3 tbsp. cider vinegar
2 tbsp. parsley (finely chopped)
2 cloves minced garlic
salt and pepper

In a large bowl (preferable the one you will use to take to the picnic), combine the shredded cabbages and carrots. In a separate bowl combine the remaining ingredients for the dressing, whisking until smooth.

Pour the dressing over the cabbages and carrots, mixing well. Cover and refrigerate for at least 2 hours to let the flavors blend. (Make it in the morning, throw it in the cooler, by picnic time it will be perfect!)
