Sweet and Sour Coleslaw
This sweet and sour coleslaw recipe makes a great companion to any of the picnic sandwiches listed in this site. Ingredients: | 4 cups | green cabbage (shredded) | | 2 cups | red cabbage (shredded) | | 1 | carrot (peeled and shredded) |
Dressing Ingredients: | 3/4 cup | low-fat mayonnaise | | 1/2 cup | low-fat sour cream | | 1 1/2 Tbsp. | sugar | | 3 Tbsp. | cider vinegar | | 2 Tbsp. | parsley (finely chopped) | | 2 cloves | garlic, minced | | to taste | salt and pepper |
In a large bowl (preferable the one you will use to take to the picnic), combine the shredded red and green cabbages and carrots. In a separate bowl combine the remaining ingredients for the dressing, whisking until smooth. Pour the dressing over the cabbages and carrots, mixing well. Cover and refrigerate for at least 2 hours to let the flavors blend. (Make it in the morning, throw it in the cooler, by picnic time it will be perfect!)
