Strawberry Lemonade Recipe

Strawberry lemonade is a beautiful jewel-toned picnic drink that is sweetly refreshing and a wonderful change from plain old classic lemonade. It is also a great way to use up any slightly overripe strawberries you may have. If you would like to add some fizz to your strawberry lemonade, add a splash of sparkling water.

Ingredients:

2 1/2 cups (625 ml) hulled strawberries
1 1/2 cups (375 ml) fresh lemon juice
(6-8 lemons)
1 cup (250 ml) sugar
4 cups (1 L) water

In a food processor, puree the strawberries, leaving them slightly chunky.

In a large saucepan, bring strawberries, lemon juice and sugar to a boil. Then simmer over medium-low heat for approx. 3-5 minutes. Remove from heat and allow to cool for a 5-10 minutes. Strain through a cheesecloth-lined sieve, pressing out the liquid as best you can. This is your syrup. Allow it to cool. It may now be used immediately or may be stored in the refrigerator for up to 1 week.

When ready to serve at your picnic, combine the strawberry syrup with 4 cups (1 L) of cold water in a serving pitcher. Pour over a glass of ice and garnish with a few strawberry slices and a sprig of mint. Enjoy your picnic!
