Classic Spice Muffins


Making Classic Spice Muffins for a healthy picnic snack doesn't get much simpler than this. Plus - they are low fat!

Ingredients

1 cup all-purpose flour
1 cup whole wheat flour
1 egg, well beaten
1/2 cup sugar
1 cup milk
1/4 cup butter, melted
1 teaspoon each: ginger, nutmeg, cinnamon
3 teaspoons baking powder
1 teaspoon salt

Preheat oven to 425°F.

In a small bowl, sift together the dry ingredients. Set Aside. In a large bowl, combine egg, sugar, melted butter and milk. Add the dry ingredients to the wet ingredients. Mix lightly until just combined.

Fill muffin tins 2/3 full. Bake for 15-20 minutes.

Makes 12 muffins.
