Raspberry Lemonade Recipe
Pretty, pink and refreshing - this raspberry lemonade is perfect for a summer picnic gathering.
It can be made as is, or you can add some fizz and turn it into a sparkling raspberry lemonade. Garnish with mint leaves or fresh raspberries.
Ingredients:
| 2 1/2 cups (625 ml) | raspberries (fresh or frozen) |
| 1 1/2 cups (375 ml) | lemon juice (approx. 8 lemons) |
| 1/4 cup (175 ml) | sugar |
| 2 3/4 cups (675 ml) | water (or sparkling water) |
In a large pot, bring raspberries, lemon juice and sugar to a boil. Reduce heat and simmer until the sugar has dissolved and raspberries are softened (approx. 3 minutes). Remove from heat and carefully mash the fruit (with a potato masher).
Allow to cool. Strain the mixture through a fine sieve, or use cheesecloth, pressing out as much of the liquid as possible. This raspberry lemonade syrup can now be stored in the refrigerator for up to a week.
When ready to serve, combine raspberry syrup with cold water. For a refreshing fizzy lemonade, use sparkling water instead. Stir in some ice and enjoy!
