Ranger Cookies

Ranger cookies are a chewy and nutritious snack. They make an excellent picnic or lunchbox cookie. Kids especially enjoy the crisped rice cereal in them.


Ingredients:

1 cup butter or margarine softened
3/4 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 tbsp. vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp. baking soda
1/2 tsp. baking powder
2 cups crisp rice cereal
2 cups rolled oats (not instant/quick oats)
3/4 cup coconut
1 cup raisins

Cream butter and sugars together. Beat in eggs and add vanilla.

Stir together flours, baking soda and baking powder and add, mixing well. Blend in the cereal, rolled oats, coconut and raisins. Roll into 1 inch balls and place on a greased cookie sheet.

Bake 375°F (190°C) for 6-8 minutes. Makes about 8 dozen.
