Ranger Cookies
Ranger cookies are a chewy and nutritious snack. They make an excellent picnic or lunchbox cookie. Kids especially enjoy the crisped rice cereal in them.
| 1 cup | butter or margarine softened |
| 3/4 cup | granulated sugar |
| 3/4 cup | brown sugar |
| 2 | eggs |
| 1 tbsp. | vanilla |
| 1 cup | all-purpose flour |
| 1 cup | whole wheat flour |
| 1 tsp. | baking soda |
| 1/2 tsp. | baking powder |
| 2 cups | crisp rice cereal |
| 2 cups | rolled oats (not instant/quick oats) |
| 3/4 cup | coconut |
| 1 cup | raisins |
Cream butter and sugars together. Beat in eggs and add vanilla.
Stir together flours, baking soda and baking powder and add, mixing well. Blend in the cereal, rolled oats, coconut and raisins. Roll into 1 inch balls and place on a greased cookie sheet.
Bake 375°F (190°C) for 6-8 minutes. Makes about 8 dozen.
