Raisin Bran Cookies

Raisin bran cookies? Sound's like breakfast! With a healthy cookie like this, you could enjoy it for breakfast, coffee time, snack time... Why not take a few on an early morning walk to your favourite park with a thermos of hot coffee or fresh orange juice.

1/2 cup butter or margarine (softened)
2/3 cup brown sugar
1 egg
1 tsp. vanilla
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tsp. cinnamon (optional)
1/3 cup raisins (or dried cranberries)
1/2 cup all bran cereal
1/3 cup chopped nuts

Cream butter and sugar together. Beat in egg and vanilla. Add the remaining ingredients, mixing well. Drop by spoonful onto a greased cookie sheet. Flatten with a fork dipped in sugar.

Bake in a 350°F (180°C) oven for 10-12 minutes. Makes about 3 dozen.
