Raisin Bran Cookies
Raisin bran cookies? Sound's like breakfast! With a healthy cookie like this, you could enjoy it for breakfast, coffee time, snack time... Why not take a few on an early morning walk to your favourite park with a thermos of hot coffee or fresh orange juice.
Ingredients:
| 1/2 cup | butter or margarine (softened) |
| 2/3 cup | brown sugar |
| 1 | egg |
| 1 tsp. | vanilla |
| 1/2 cup | all-purpose flour |
| 1/2 cup | whole wheat flour |
| 1 tsp. | cinnamon (optional) |
| 1/3 cup | raisins (or dried cranberries) |
| 1/2 cup | all bran cereal |
| 1/3 cup | chopped nuts |
Cream butter and sugar together. Beat in egg and vanilla. Add the remaining ingredients, mixing well. Drop by spoonful onto a greased cookie sheet. Flatten with a fork dipped in sugar.
Bake in a 350°F (180°C) oven for 10-12 minutes. Makes about 3 dozen.
