Peanut Chicken Pitas


Perfectly packable and nutritious lunch fare, these peanut chicken pitas are a totally satisfying meal.

Be sure to pack the filling separately in a resealable bowl and assemble your pita sandwiches at your picnic destination in order to avoid soggy sandwiches.

Ingredients:

2 chicken breasts, fully cooked
1/4 cup peanut butter
3 Tbsp. sodium-reduced soy sauce
3 Tbsp. lime juice
2 tsp. sugar
1 tsp. minced gingerroot
1 tsp. sesame oil
1 clove garlic, minced
2 celery sticks, diced
2 green onions, diced
1 carrot, grated
1/2 cup snow peas
4 whole wheat pitas, halved

Cut the cooked chicken into small cubes or slices.
In a large bowl, whisk together the peanut butter, soy sauce, lime juice, sugar, ginger, sesame oil and minced garlic. Stir in the cut chicken, celery, green onions, carrot and snow peas.

This may now be stored in an airtight container in the fridge/cooler until picnic time. Serves 4


Per serving: approx. 415 cal., 28 g protein, 15 g fat, 5 g fibre, 900 mg sodium, 9% calcium, 24% iron, 27% vit A, 13% vit C, 40% folate.
