Orange Ginger Chicken on Buns
Flavourful orange ginger chicken on buns. Perfect for any picnic where you have a barbeque, whether it be in your own backyard or in your favourite park or campground.
| 4 | chicken breasts, boneless and skinless |
| 4 | whole wheat/multigrain buns |
| 3 Tbsp. | light mayonnaise |
| 4 | romaine lettuce leaves |
| 1 | roasted red or yellow sweet pepper, cut into strips |
| 4 | red onion, thinly sliced |
Orange Ginger Marinade:
| 1 Tbsp. | grated orange rind |
| 1/4 cup | orange juice |
| 3 | green onions, finely chopped |
| 1 clove | garlic, minced |
| 1 Tsp. | ground or fresh ginger |
| 1 Tsp. | soy sauce |
Orange Ginger Marinade:
Whisk together marinade ingredients and pour over chicken breasts. Marinate for about 15-20 minutes, or cover and refrigerate up to 8 hours.
Lightly grease your cooking grill with cooking spray. Place chicken on grill over medium heat. With lid closed, grill approx. 10 minutes (turning once after 5 minutes), until no longer pink inside.
Spread mayonnaise onto cut buns. Add lettuce, sweet pepper, onions and grilled chicken. Enjoy!
Food Safety Note:
If you would like to use the leftover orange ginger marinade as a dipping sauce for your sandwich, the marinade MUST be cooked first.
