Orange Ginger Chicken on Buns


Flavourful orange ginger chicken on buns. Perfect for any picnic where you have a barbeque, whether it be in your own backyard or in your favourite park or campground. A much healthier alternative to hamburgers!

Ingredients:

4 chicken breasts, boneless and skinless
4 whole wheat/multigrain buns
3 Tbsp. light mayonnaise
4 romaine lettuce leaves
1 roasted red or yellow sweet pepper, cut into strips
4 red onion, thinly sliced

Orange Ginger Marinade Ingredients:
1 Tbsp. grated orange rind
1/4 cup orange juice
3 green onions, finely chopped
1 clove garlic, minced
1 Tsp. ground or fresh ginger
1 Tsp. soy sauce


Whisk together marinade ingredients and pour over chicken breasts. Marinate for about 15-20 minutes, or cover and refrigerate until picnic time (up to 8 hours).

Lightly grease your cooking grill with cooking spray. Place chicken on grill over medium heat. With lid closed, grill approx. 10 minutes (turning once after 5 minutes), until no longer pink inside.

Spread mayonnaise onto cut buns. Add lettuce, sweet pepper, onions and grilled chicken. Enjoy!

Food Safety Note:

The orange ginger marinade makes an excellent dipping sauce for the sandwiches, but remember you MUST cook it first. Simply boil in a small pot for a few minutes.
