Oatmeal Chocolate Chip Cookies

An all-time favourite - chocolate chip cookies! These cookies have more staying power and give you and your kids lots of energy for a great picnic day!

1 cup butter or margarine (softened)
1 1/2 cups brown sugar
2 eggs
1 tbsp. vanilla
1 cup all-purpose flour
1 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 3/4 cups rolled oats (not instant)
2 cups semisweet chocolate chips*
1/2 cup medium-flaked coconut

Cream butter and sugar together. Beat in eggs one at a time. Add vanilla.

Add remaining ingredients and mix well. Drop by spoonfuls onto a greased cookie sheet. Bake in 350°F (180°C) oven for about 8-10 minutes.

*Another great alternative is to replace 1 cup of chocolate chips with 1 cup of raisins. You could also add 1/2 cup of your favourite chopped nuts.
