Oatmeal Chocolate Chip Cookies
An all-time personal favourite - oatmeal chocolate chip cookies! These cookies have more staying power and will give you and your kids lots of energy for a great picnic day!
Ingredients:
| 1 cup | butter or margarine (softened) |
| 1 1/2 cups | brown sugar |
| 2 | eggs |
| 1 tbsp. | vanilla |
| 1 cup | all-purpose flour |
| 1 cup | whole wheat flour |
| 1 tsp. | baking powder |
| 1/2 tsp. | baking soda |
| 1 3/4 cups | rolled oats |
| 2 cups | semisweet chocolate chips* |
| 1/2 cup | medium-flaked coconut |
Cream butter and sugar together. Beat in eggs one at a time. Add vanilla.
Add remaining ingredients and mix well. Drop by spoonfuls onto a greased cookie sheet. Bake in 350°F (180°C) oven for about 8-10 minutes.
*There are lots of great alternative add-ins to this cookie recipe:
- Replace equal amounts of raisins for the chocolate chips.
- Replace 1 cup of chocolate chips with 1 cup of raisins - a delicious combination!
- Add 1/2 cup of your favourite chopped nuts.
- Add 1/2 cup of Skor toffee bits.
