Morning Glory Muffins

Have you every considered a picnic for breakfast? Take these morning glory muffins along with a hot thermos of coffee, and enjoy the quiet solitude of an early morning walk or hike.

Ingredients:

1/2 cup raisins
1 cup all-purpose flour
1 cup whole wheat flour
3/4 cup sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
3 eggs
2 teaspoons vanilla
1/3 cup vegetable oil
1/3 cup applesauce
2 cups grated carrots
1 large green apple, grated
1/2 cup sliced almonds
1/2 cup shredded coconut

Preheat oven to 350°F.

Soak raisins in hot water for 30 minutes; drain. This process makes them extra plump in your muffins!

In a large bowl, mix flours, sugar, baking soda, cinnamon and salt. Stir in raisins, carrots, grated apple, almonds and coconut

In a smaller bowl, whisk together eggs, oil, applesauce, and vanilla. Stir into first mixture until just combined.

Bake in greased muffin tins 20-22 minutes. Let cool 5 minutes before removing from muffin tin.
