Low-Fat Anything Muffins
What on earth is a low-fat anything muffin? Besides delicious? This versatile recipe allows you to use whatever you happen to have in the house as your own "secret ingredient". And, because of the "secret ingredient", these muffins are very moist and taste different each time you make them. And they are low in fat!
So, what's the "secret ingredient" to these low-fat anything muffins? Try fresh berries, grated apples, carrots or zucchini, or even mashed pumpkin. If you wish, add up to 1 tsp. (2 ml) of cinnamon to your recipe.
| 1 cup | all-purpose flour |
| 1/2 cup | whole wheat flour |
| 2 1/2 teaspoons | baking powder |
| 3/4 cup | sugar |
| 1/2 teaspoon | salt |
| 2 | eggs |
| 3 teaspoons | canola oil |
| 1 cup | secret ingredient |
Mix all dry ingredients together in a large bowl. In a smaller bowl, whisk together the eggs and oil. Add 1 cup of the "secret ingredient". Add the secret ingredient mixture to the flour mixture until just moistened.
Fill paper-lined, or well-greased muffin cups about 3/4 full.
Bake in a 400°F (200°C) oven for approx. 20 minutes.
