Classic Lemonade Recipe

Put the squeeze on hot summer days with this zesty classic lemonade recipe. It is the picnic drink of summer!

8 lemons
1 cup (250 ml) sugar
2 cups (500 ml) ice cubes
lemon slices

Wash the lemons thoroughly and dry. In a large heatproof bowl, rub one lemon at a time with about a third of the sugar. Set aside the sugar. Cut each lemon in half and squeeze out the juice into a measuring cup. You will need approx. 1 1/2 cups (375 ml) of juice.

Pour the lemon juice into the sugar that was rubbed on the lemons. Add the remaining sugar along with the squeezed lemon peels. Cover with 3 cups (750 ml) of boiling water. Stir to dissolve the sugar and let cool. Strain (using cheesecloth or a strainer), pressing out all the liquid. This lemon syrup can now be refrigerated in an airtight container for up to one week.

When ready to serve, combine the lemon syrup with 2 cups (500 ml) of cold water. Serve with ice cubes and lemon slices.
