Put the squeeze on hot summer days with this zesty classic lemonade recipe. It is the picnic drink of summer! Ingredients: | 8 | lemons | | 1 cup (250 ml) | sugar | | 2 cups (500 ml) | ice cubes | | | lemon slices |
Wash the lemons thoroughly and dry. In a large heatproof bowl, rub one lemon at a time with about a third of the sugar. Set aside the sugar. Cut each lemon in half and squeeze out the juice into a measuring cup. You will need approx. 1 1/2 cups (375 ml) of juice. Pour the lemon juice into the sugar that was rubbed on the lemons. Add the remaining sugar along with the squeezed lemon peels. Cover with 3 cups (750 ml) of boiling water. Stir to dissolve the sugar and let cool. Strain (using cheesecloth or a strainer), pressing out all the liquid. This lemon syrup can now be refrigerated in an airtight container for up to one week. When you're ready to serve your lemonade, combine the lemon syrup with 2 cups (500 ml) of cold water. Serve with ice cubes and lemon slices.
