Italian Sub Sandwich

The italian sub sandwich is the ultimate attention grabbing recipe for your next picnic. If you make some of these, you're likely going to be reponsible for the food on all of your upcoming picnics! You should be able to find all the ingredients in an italian deli or one of the better supermarkets, including the bread.

1/4 cup red wine vinegar
1 tsp. dried oregano
1/2 tsp. dry mustard
to taste salt and pepper
1/2 cup extra-virgin olive oil
1/2 cup sliced pepperoncini
(a sweet Italian pepper with a bit of a bite)
1/2 cup sliced cherry peppers
2 cups finely shredded iceberg lettuce
4 tomatoes, thinly sliced

1 loaf of italian bread

5 oz of each of the following, thinly sliced:

  • salami
  • cappicola
  • salami cotto
  • mortadella
  • provolone cheese

In a small glass bowl, combine vinegar, oregano, mustard, and salt & pepper to taste. Stir to mix well. Whisk in the olive oil until incorporated and mixture is somewhat homogeneous.

Slice the loaf of bread horizontally. On the bottom half spread the pepperoncini and cherry peppers. Layer on the lettuce and tomatoes, and drizzle with a few tablespoons of the dressing. Layer the meats, one at a time, evenly over the tomatoes. Finish up with a layer of provolone cheese.

Drizzle more dressing over the top half of the loaf, and place it on top of the sub.

To let the sandwich soak up the delicious flavourings, wrap in plastic wrap and refrigerate for at least 1 hour (or up to 4 hours). That's what makes this such a perfect picnic sandwich!
