Grilled Chicken Baguettes
Planning to barbeque at your picnic? Grilled chicken baguettes with caper mayonnaise make a healthy and delicious alternative to greasy burgers.
Because chicken pairs well with so many other flavours, you may also use this recipe with many other flavourful sandwich spread recipes.
Sandwich Ingredients:
| 1/4 cup | olive oil |
| 1 Tbsp. | grated lemon rind |
| 3 Tbsp. | lemon juice |
| 1 clove | garlic, minced |
| 1 tsp. | dillweed |
| 1/4 tsp. | each, salt & pepper |
| 4 | chicken breasts, boneless & skinless |
| 1 | baguette |
| | tomatoes, sliced |
| | lettuce |
Caper Mayonnaise:
| 1/4 cup | low-fat mayonnaise |
| 2 Tbsp. | fresh parsley, chopped |
| 2 Tbsp. | drained, rinsed capers, chopped |
| 2 tsp. | lemon juice |
In a bowl, whisk together the olive oil, lemon rind, lemon juice, minced garlic, dill, salt and pepper. Add chicken. You can now let this marinate in a covered dish in your cooler until picnic time. If you are making it at home, let stand for at least 15 minutes, or cover and refrigerate up to 6 hours.
Prepare caper mayonnaise by combining all ingredients.
Place chicken on a greased grill over medium-high heat. Grill, turning once until no longer pink inside (approx. 10-12 minutes).
Cut baguette in half lengthwise. Cut baguette again into 4 pieces. Fill with lettuce, tomatoes, chicken and caper mayonnaise. Enjoy!
