Chewy Ginger Cookies
If you like ginger cookies, then you'll love these. They are lower in fat than most, are a good source of fibre, and are soft and chewy. Great for hikes, picnics and lunchboxes.
| 1/2 cup | vegetable oil |
| 1/2 cup | molasses |
| 1/2 cup | honey |
| 1 | egg |
| 1 cup | all-purpose flour |
| 1 1/2 cups | whole wheat flour |
| 1/2 cup | powdered milk |
| 1/4 cup | wheat germ |
| 2 tsp. | baking soda |
| 1 tsp. | cinnamon |
| 3 tbsp. | fresh grated ginger root |
| | 1 tbsp. (or more) ginger powder may also be used |
Preheat oven 350°F (180°C).
In a medium bowl, beat together oil, honey, molasses and egg.
In a larger bowl combine the remaining ingredients. Add the molasses and honey mixture. Combine, but do not overmix. This batter will be quite thick.
Drop by teaspoonfuls onto a greased cookie sheet. Bake for about 10 minutes. Makes about 4 dozen.
