Energy bars

How do you make energy bars that are kid friendly?

When they look like Rice Krispies squares, of course!

With the dried fruit and seeds, these bars cover almost all the food groups. Serve them with a dairy drink or protein shake.

1/2 cup margarine or butter
1/3 cup honey
1/3 cup sugar
4 cups crisped rice cereal
1/2 cup chopped dried apricots*
1/2 cup sunflower seeds (without the shells!)*
1/2 cup pumpkin seeds*
1/3 cup sesame seeds*
*Any variation of dried fruit and seeds/nuts may be used here

Place margarine (or butter), honey and sugar in a saucepan and simmer for 5 minutes (or microwave on HIGH (100%) for 5 minutes).

Place the remaining ingredients in a bowl. Add the honey mixture and mix well.

Press firmly into a 11cm x 21cm (5"x8") cookie tin with damp hands. Refrigerate until firm.
