Country Harvest Bread

Country harvest bread is one of my personal favourites for sandwiches. This bread recipe is high in fibre and contains heart-healthy flax, sunflower and sesame seeds.

Small Loaf
(1.5 lb)
Large Loaf
(2 lb.)
water 1 cup 1 cup
apple juice 1/4 cup 1/3 cup
skim milk powder 1/4 cup 1/4 cup
salt 1 1/2 tsp. 1 1/2 tsp.
honey 2 tbsp. 3 tbsp.
shortening 2 tbsp. 3 tbsp.
whole wheat flour 1 cup 1 1/4 cups
all-purpose flour
or bread flour
2 cups 2 1/3 cups
flax seeds, ground 1/4 cup 1/3 cup
sunflower seeds,
raw & unsalted
2 tbsp. 1/4 cup
sesame seeds 1 tbsp. 2 tbsp.
bread machine yeast 1 3/4 tsp. 1 3/4 tsp.

Measure ingredients into baking pan according to your bread machine's manufacturer. Select the Whole Wheat Cycle.

Different types of seeds may be used in this recipe (keeping the total measured amount the same). Try pumpkin or poppy seeds too.

Tip: Keep your seeds (and nuts) from becoming rancid by storing them in an airtight container in your fridge or freezer.

Healthy Tip:
The flax seeds used in this recipe are a great source of linoleic acid (omega-3). Research shows that omega-3 acids help protect against postmenopausal breast cancer, bone deterioration and heart disease. Please note that flax seeds must be ground in order for our bodies to digest them.
