Coconut Fruit Balls

These tangy coconut fruit balls have no added sugar and no baking required. Just mix in your food processor and shape into bite-sized balls.

Coconut fruit balls are a healthy energy ball perfect for picnics and hikes. They keep well in a sealed container, and also freeze well for longer use.

1 cup Dates (cut up)
1 cup Raisins
1 cup Dried Apricots (cut up)

1 cup Chopped nuts
1 cup Coconut

approx. 1 cup Coconut

Using a food processor, grind up the dates, raisins and apricots. Add the chopped nuts and first amount of coconut. Shape into 1 inch balls and then roll into more coconut.

Makes approx. 4 dozen energy balls. This recipe may be easily halved to make approx. 24.
