Coconut Fruit Balls
These tangy coconut fruit balls have no added sugar and there is no baking required - perfect for hot days when you don't want to fire up the oven! Just mix in your food processor and shape into bite-sized balls.
This healthy energy ball recipe is perfect for picnics and hikes. They keep very well in a sealed container, and also freeze well for longer use.
Ingredients:
| 1 cup | Dates (cut up) |
| 1 cup | Raisins |
| 1 cup | Dried Apricots (cut up) |
| 1 cup | Chopped nuts |
| 1 cup | Coconut |

Using a food processor, grind up the dates, raisins and apricots. Add the chopped nuts and first amount of coconut. Shape into 1 inch balls and then roll into more coconut.
Makes approx. 4 dozen energy balls. This recipe may be easily halved to make approx. 24.
