Chicken Clubs

You may be thinking "Why do I need a recipe for a chicken club sandwich?" This extra-ordinary chicken sandwich comes with a flavourful goat cheese spread and roasted red peppers.

Goat cheese spread:

11 ounces soft creamy goat cheese
3 tablespoons niçoise or black olives, finely chopped
2 1/2 tablespoons fresh basil, finely chopped
1 tablespoon capers, drained and chopped
2 1/2 teaspoons fresh thyme, chopped
2 teaspoons garlic, minced
1 teaspoon freshly ground black pepper

The sandwich:

8 slices crusty French bread
8-10 ounces roasted or grilled chicken (or turkey)
7 ounce jar roasted red peppers
1 1/2 cups mixed baby greens (loosely packed)
2 teaspoons olive oil
1 teaspoon lemon juice
Salt (to taste)
Black pepper (to taste)


Goat cheese spread:

Combine all ingredients in a bowl and mix well to blend. You can make the spread ahead of picnic time, just cover it and refrigerate it until picnic day.

The sandwich:

Spread the cheese mixture on the bread slices. Layer the chicken on top. Drain, rinse and pat the peppers dry, and layer on top of the chicken.

Toss the greens with the olive oil and lemon juice, and season generously with salt and pepper. Divide greens and mound on top of peppers. Cover with top bread slice.

Please remember to keep this sandwich cool until serving time.
