Broccoli and Feta Cheese Salad

Raw broccoli is definitely not a common salad ingredient, especially mixed with feta cheese! But I highly recommend you give this very colourful salad a try.

2 cups romaine lettuce (shredded)
4 cups broccoli (chopped)
1 each sweet red and yellow pepper (chopped)
3/4 cup red onion (chopped)
1/2 cup feta cheese (crumbled)
1/4 cup dried cranberries

Dressing:

1/4 cup lemon juice
1/4 cup extra-virgin olive oil
salt and pepper (to taste)

In the bottom of a large transportable bowl (with a fitted lid) place the romaine lettuce. Toss together the broccoli, peppers, onion, cheese and dried cranberries (or you could use raisins), and place on top of the romaine lettuce in the bowl.

Whisk together the dressing ingredients in a small bowl and pour over the vegetables, coating evenly.

The longer this stands, the more flavour it has - perfect for making ahead and taking along to your picnic destination! May be kept refrigerated for up to 2 days.



Healthy Tip:
Broccoli is a very nutrient rich food: One cup gives you about a quarter of your recommended daily intake of vitamin A (as beta carotene) and more vitamin C than a glass of orange juice. It also contains calcium, folic acid and fibre. Chlorophyll gives it its dark green colour and is believed to be a powerful cancer-fighting agent when digested.
