Fibre-Full Bran Muffins

Everyone will enjoy these fibre-full bran muffins. Moist and slightly sweet and, as the name says, full of fibre. If you want even more fibre, use All Bran-Buds cereal with psyllium.

2 eggs
1 1/3 cups buttermilk or soured milk
1/3 cup vegetable oil
1/4 cup liquid honey
2 teaspoons vanilla
1 1/2 cups 100% bran cereal
1 3/4 cups whole wheat flour
1/2 cup brown sugar, packed
1 1/2 teaspoons baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup raisins or chopped, dried figs

Preheat oven to 375°F. Line muffin cups with paper liners or spray with non-stick cooking spray.

Whisk together eggs, buttermilk, oil, honey and vanilla. Stir in the bran cereal and let stand for 10 minutes.

In a large bowl, mix together the flour, sugar, baking soda, cinnamon and salt. Pour the bran mixture into the dry ingredients, sprinkle with raisins or figs. Stir gently until just moistened. Spoon into prepared muffin cups.

Bake about 25 minutes, until the tops are firm to the touch. Cool in pan for 10 minutes before removing.
