Fibre-Full Bran Muffins
The name says it all! This recipe creates bran muffins that are moist, slightly sweet and full of fibre. If you want even more fibre, use All Bran-Buds cereal with psyllium.
Ingredients:
| 2 | eggs |
| 1 1/3 cups | buttermilk or soured milk* |
| 1/3 cup | vegetable oil |
| 1/4 cup | liquid honey |
| 2 teaspoons | vanilla |
| 1 1/2 cups | 100% bran cereal |
| 1 3/4 cups | whole wheat flour |
| 1/2 cup | brown sugar, packed |
| 1 1/2 teaspoons | baking soda |
| 1/2 teaspoon | cinnamon |
| 1/2 teaspoon | salt |
| 1 cup | raisins or chopped, dried figs |
Preheat oven to 375°F. Line muffin cups with paper liners or spray with non-stick cooking spray.
Whisk together eggs, buttermilk, oil, honey and vanilla. Stir in the bran cereal and let stand for 10 minutes.
In a large bowl, mix together the flour, sugar, baking soda, cinnamon and salt. Pour the bran mixture into the dry ingredients, sprinkle with raisins or figs. Stir gently until just moistened. Spoon into prepared muffin cups.
Bake about 25 minutes, until the tops are firm to the touch. Cool in pan for 10 minutes before removing.
*Substitution Tip: If you don't have buttermilk, you can substitute soured milk. Place 1 tbsp lemon juice or vinegar into measuring cup. Add milk to the desired level; let stand for 10 minutes, then stir and add to recipe.
