Blueberry Granola Bars

Instead of buying sugar-filled cereal bars from the store, why not make your own with this healthy blueberry granola bar recipe? They are simple to make, but the biggest advantage is that "you know and control what goes in"!

Healthy Tip:
Blueberries are one of the richest sources of antioxidants. Researchers also claim that the phytochemicals in blueberries can help reverse short-term memory loss.

1/2 cup honey
1/3 cup brown sugar
3 tbsp. vegetable oil
1 1/2 tsp. cinnamon
1 1/2 cups quick-cooking oats
2 cups fresh blueberries*
*or any other favourite fresh fruit

Preheat oven to 350°F (180°C). Lightly grease a 9"x9" (22.5cm x 22.5cm) flat cake pan.

In a small sauce pan mix honey, brown sugar, oil and cinnamon together and bring to a boil. Boil for 2 minutes without stirring. Remove from heat.

In a large bowl, mix quick oats and blueberries. Add in the contents of the saucepan and mix well. Pour into the cake pan and press down lightly to make it flat. Bake until it appears brown, or approx. 40 minutes. Cool completely before removing from cake pan. Cut to desired size, or approx. 18 bars.
