Blueberry Flax Seed Muffins
Blueberry flax seed muffins are an extremely healthy and delicious snack. This makes them very suitable for not only hiking and picnicking, but also makes a great breakfast muffin. This muffin recipe will make a dozen delicious fibre rich muffins.
| 1/4 cup (50 ml) | flax seed, ground |
| 1 3/4 cups (425 ml) | whole wheat flour |
| 1 cup (250 ml) | all-purpose flour |
| 3/4 cup (175 ml) | brown sugar |
| 2 tbsp. (25 ml) | baking powder |
| 1 tsp. (5 ml) | cinnamon |
| 1/2 tsp. (2 ml) | salt |
| 1 1/2 cups (375 ml) | blueberries (fresh or frozen) |
| 3 | large eggs (beaten) |
| 1 1/2 cups (375 ml) | milk |
| 1/2 cup (125 ml) | applesauce (unsweetened) |
| 1 1/2 tsp. (7 ml) | vanilla extract |
Preheat oven to 375°F (190°C).
Place ground flax seed, flour, brown sugar, baking powder, cinnamon and salt into a large bowl and whisk together. Measure out the blueberries and place into a small bowl. Coat the blueberries with 1/4 cup of the flour mixture. Into a third bowl whisk together the eggs, milk, applesauce and vanilla. Add to the flour mixture until just moistened. Fold in the blueberries.
Spray a muffin pan with non-stick vegetable oil or line with paper muffin cups. Fill each muffin cup with batter up to the top.
Bake for approx. 25 minutes, or until golden and muffins spring back when you touch gently in the center.
Healthy Tip:
Flax seeds are rich in protein and contains fibre and the essential nutrients iron, niacin, calcium, vitamin E and phosphorous. Flax is also gluten-free, contains omega-3 fatty acids (shown to reduce the risk of heart disease), and lignans (which may help protect against certain types of cancer). Please note that flax seed must be ground for maximum health benefits (whole flax seeds pass through your system undigested).
This muffin recipe also contains blueberries. They are rated tops for their antioxidant capability (destroying free radicals in your body).
