Blueberry Banana-Split Muffins
Blueberry banana-split muffins ... Kids will eat these just because of the name - just don't tell them how healthy they are for them!
| 1 cup | oat bran |
| 1 cup | whole wheat flour |
| 3/4 cup | wheat germ |
| 1/2 cup | packed brown sugar |
| 2 tsp. | baking powder |
| 1 tsp. | baking soda |
| 1/4 tsp. | salt |
| 1 cup | blueberries |
| | Grated rind of 1 medium lemon |
| 2 | eggs |
| 3/4 cup | buttermilk or soured milk* |
| 3 tbsp. | vegetable oil |
| 1 cup | mashed bananas (3 medium size) |
| 1/2 cup | chocolate chips |
Lightly grease or spray nonstick muffin pans with nonstick cooking spray. Preheat oven to 400°F (200°C).
In a large bowl, stir together oat bran, whole wheat flour, wheat germ, brown sugar, baking powder, baking soda, salt, blueberries and lemon rind.
In a separate bowl, lightly beat eggs; stir in buttermilk and oil. Pour over dry ingredients; stir until just combined.
Spoon into prepared pans. Bake in 400F (200C) oven for 20 minutes or until tops are firm to the touch. Makes 12 muffins.
*Substitution Tip: If you don't have buttermilk, you can substitute soured milk. Place 1 tbsp lemon juice or vinegar into measuring cup. Add milk to the 1 cup level; let stand for 10 minutes, then stir.
