Bite-Size Energy Balls

Bite-size energy balls are exactly what the name implies - an energy bar in a bite-sized form. They contain the goodness of dried fruit and nuts and contain no added fat.

The dried fruit and nuts can be varied according to your own personal preferences (remember to keep the quantities the same).

1/2 cup (125 ml) dried cranberries
1/2 cup (125 ml) raisins
1/2 cup (125 ml) dried, chopped apricots
1/3 cup (75 ml) unsweetened coconut
2 tbsp. (25 ml) liquid honey
2 tbsp. (25 ml) orange juice
1/2 cup (125 ml) almonds, finely chopped

Mix together the cranberries, raisins, apricots and coconut until combined. If you wish, you may do this in a food processor, chopping together until just combined.

Stir the orange juice and honey together and add to the dried fruit. Stir until the mixture clumps together.

Form the mixture into 1-inch balls and roll them into the chopped nuts.

These energy balls can be kept in an airtight container up to a week in your refrigerator.
