Apple and Spice Muffins

Your house will smell delicious as you bake these fragrant apple spice muffins before your next picnic.


2 cups white flour
1 cup whole wheat or multigrain flour
2 eggs well beaten
4 teaspoons baking powder
1 1/4 cups milk (low-fat)
3 tablespoons sugar
2 teaspoons salt
1/2 cup shortening
1 cup apples, chopped
2 tablespoons sugar
3/4 teaspoon cinnamon

Preheat oven to 425°F.

Mix together flour, baking powder, 3 tablespoons sugar, and salt. Cut in shortening with a fork or pastry cutter until mixture is very fine.

Stir in eggs and milk until just moistened. Add the chopped apples. Spoon mixture into muffin tins with paper liners or spray tin with non-stick cooking spray.

Mix together 2 tablespoons sugar and cinnamon. Sprinkle cinnamon mixture on top of muffins.

Bake for 25 minutes.
