Apple Spice Cookies

These apple spice cookies are great news for cookie lovers trying to watch their fat intake - they are completely fat free!

1 cup all purpose flour
1 cup whole wheat flour
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/4 tsp. cloves
1 tsp. cinnamon
1 cup chopped, unpeeled apple
1 can (6 oz.) frozen apple juice concentrate, thawed
3 egg whites
1/4 cup firmly packed brown sugar

Preheat oven to 375 F. Spray cookie sheets with nonstick spray.

In a large bowl, combine flours, spices and baking soda. Add chopped apples and juice. Stir until dry ingredients are just moistened (batter will be stiff).

In a small bowl, beat egg whites until frothy. Add brown sugar and beat until soft peaks form. Stir into batter. Drop by teaspoonfuls onto cookie sheets.

Bake for 9-11 minutes, until lightly browned. Cool completely and store in a covered container until picnic time. Makes 3 dozen.
