Apple Spice Cookies
This recipe for fat-free apple spice cookies provide a delicious energy-rich cookie for a healthy picnic snack.
Ingredients:
| 1 cup | all purpose flour |
| 1 cup | whole wheat flour |
| 1/2 tsp. | baking soda |
| 1/2 tsp. | nutmeg |
| 1/4 tsp. | cloves |
| 1 tsp. | cinnamon |
| 1 cup | chopped, unpeeled apple |
| 1 can (6 oz.) | frozen apple juice concentrate, thawed |
| 3 | egg whites |
| 1/4 cup | packed brown sugar |
Preheat oven to 375°F.
Spray cookie sheets with nonstick spray.
In a large bowl, combine flours, spices and baking soda. Add chopped apples and juice. Stir until dry ingredients are just moistened (batter will be stiff).
In a small bowl, beat egg whites until frothy. Add brown sugar and beat until soft peaks form. Stir into batter. Drop by teaspoonfuls onto cookie sheets.
Bake for 9-11 minutes, until lightly browned. Cool completely and store in a covered container until snack time. Makes 3 dozen.
